Banana Loaf Cake

Bored of your stereotypical Banana bread? I've got you covered with this delicious Banana loaf. Super easy to make and totally delicious to eat! What more could you want?



During Lockdown 1 it seemed like the whole of the internet was baking banana bread, loaves and cakes, right? Well, I must admit I definitely jumped on the trend and in doing so baked this absolutely delicious cake-style banana loaf!


It's light, it's fluffy and it's 100% easy to make. With only 6 key ingredients you really can't do much wrong! Scroll down to the bottom of the page for a step-by-step method on how to make it.




 

Ingredients:

> 150g unsalted butter/baking butter

> 150g caster sugar

> 2 eggs

> 150g self-raising flour

> 2 bananas (3 if small)

> 2tsp milk


Method:

Step 1 > The first two steps in making any cake are always the same: line your cake tins and preheat the oven. So, preheat the oven to 180c and line a loaf tin with baking paper.

Step 2 > Add the butter into a large bowl and soften until there are no hard lumps.

Step 3 > Pour the caster sugar into the same bowl and mix together until light and fluffy.

Step 4 > Now, some people don't necessarily always do this step when baking but please do! Grab another bowl, crack the two eggs into it and whisk until the mixture turns slightly paler than it was before. Whisking these two eggs together in a separate bowl instead of cracking them straight into the original bowl will help your cake to be fluffier.

Step 5 > Add the eggy mixture into the large bowl along with the sugar and butter. Whisk together until combined.

Step 6 > Sift the flour into the mixture. Top tip: Sift the flour in halves! Add 75g first, mix until smooth and then add the leftover 75g. This will mean that you get no pockets of four left in your mixture.

Step 7 > Mash the bananas together in a separate bowl and add into the mixture using a folding technique so that the banana is evenly dispersed.

Step 8 > Measure out 2tsp of milk and mix into the other ingredients.

Step 9 > Pour the contents into your baking tin and bake in the oven for 35-40 minutes or until a skewer is inserted into the middle of the cake and comes out clean.

Step 10 > Once out of oven, either serve warm or leave until cool. It's totally up to you!


Optional: Put some icing or icing sugar to the top of the cake to add that extra bit of sweetness!!
